1/2 c. rice
1 c. water
4 c. milk
1/2 c. butter
2 eggs
1/2 c. sugar
1/4 t. lemon juice
1 - 1 1/2 t. nutmeg
Cook the rice in water. When water is cooked out, add the milk and butter. Cook over low heat for up to 30 minutes until the rice is plump and tender. Beat the eggs. Add the sugar and vanilla to the eggs. Stir half the rice mixture in to the egg a small amount at a time in order to bring the temperture of the eggs up. Add the egg mixture back in to the pot of rice. Cook on low for 2 minutes. Add the lemon juice and nutmeg.
